They're all so different so it's hard to say I think, but Guy Maddin's Dracula: Pages from a Virgin's Diary is probably my favourite... and it's also one of the most faithful adaptations, if not THE most faithful... (*even though it's based on a ballet version of the novel!*) Coppola's film is beautifully done and everything, but it's not as close to the novel as many people think (maybe some people are confused by the title "Bram Stoker's Dracula".. and who can blame them!
Jess Franco's filmization starts out rather faithfully, with loads of original dialogue, but that's only the first fifteen minutes or so.
